Using 5/32" Esab 8018.
Invertec 250 set at about this range.

Thanks for the pictures. That looks like a lot of hard work there. I will say good job. The only thing is the backer plate is not necessarily needed but it won't hurt anything. Keep us posted in your projects, I for one look forward to the pics.
