I know Jody has done some videos with Everlast welders which seem to work well, but I've never seen anything about their plasma cutters. Does anybody have any experience with Everlast plasma cutters?

You might try joining or searching the forum on the Everlast website. They don't trim the negative comments like you might think. Fortunately, there are not many negatives and when there is the CEO seems to rapidly correct the issue.

Anyway, I have a PowerPlasma 70 (PP70) that has been lightly used for about two years. Probably not more than 20 hours total on it. It cuts 1 1/4" steel quite easily but slowly as you might know if you are familiar with plasma cutters.

It cuts wonderfully and consumables are not too expensive. But my shop has very dry air.
You'll have to investigate the product for the features you want. A pilot arc is a feature I find useful on the farm for expanded metal. In the link above just click on the model on the left column and it will expand to show the features.
I don't think I'd recommend the low priced SuperCut models with mosfet technology but to be frank, I haven't use those models.
EDIT: Here is a back-and-forth on the mosfet plasma cutter to clarify my statement above:

Thanks for the links, GWD. Looks like there's a lot of info there. I've definitely got some reading to do.
